    Rocco Dispirito Provides The Biggest Loser Recipes
    With the growth of the popularity of The Biggest Loser show, more people are interested to learn about the recipes that are used in The Biggest Loser to assist participants in weight loss. The Biggest Loser Recipes are provided by Rocco DiSpirito.

    Periodically Rocco DiSpirito updates the Biggest Loser Recipes showing new recipes. Today we present here one of them reprinted from the Biggest Loser website, which is Fried Scallops with Melted Onions.

    Serves 4
    8 tablespoons unsalted butter (1 stick)
    1 pound sweet onions, peeled and sliced thin
    Salt and freshly ground pepper
    2 egg whites
    1 cup fine cornmeal
    1 ½ pounds large sea scallops (U-10 count, preferably)
    ¼ cup cooking oil
    1 cup canned diced tomato
    Juice of half a lemon
    4 tablespoons chopped fresh chives

    DIRECTIONS
    1. Heat a medium saucepan over low heat. Add 3 tablespoons of the butter and onions to the pan and season with salt and pepper. Cover and cook until onions are soft, stirring occasionally, about 15 minutes. Uncover and allow the water to evaporate. Onions should have the texture of marmalade.

    2. Meanwhile, in a shallow bowl, lightly whisk the egg whites. Spread the cornmeal over a plate. Toss the scallops in the egg whites until they are fully coated. Remove one scallop at a time, allowing the excess egg white to drip off, and dredge in the cornmeal. Shake off excess cornmeal and season with salt and pepper.

    3. Heat a large sauté pan over high heat. Add the oil and let it get hot. Carefully place scallops in the pan one at a time and fry until the first side is deep brown and crisped, about 2 minutes. Turn and cook on the second side until the interior is completely opaque and the outside is brown, about 2 minutes. Transfer to a paper towel-lined plate to drain and cover lightly with aluminum foil to keep warm.

    4. Drain the oil from the sauté pan and dab clean with a paper towel. Set the pan over medium heat and add the remaining butter. When the milky white solids of the butter have browned, add the tomato and sauté 1 minute. Stir in the lemon juice and chives. Season to taste with salt and pepper.

    5. Serve the fried scallops over the melted onions with the tomato-lemon sauce spooned over all.
    *On-air, The Biggest Loser contestants made substitutions to some key ingredients in the recipes to limit the number of calories.

    Rocco DiSpirito was born and raised in Jamaica, Queens. His culinary experience began at age eleven in his mother Nicolin’s kitchen. By the age of 16, DiSpirito entered the Culinary Institute of America. He graduated in 1986 and studied abroad at Jardin de Cygne in France with Dominique Cecillon and Gray Kunz. In 1990, DiSpirito earned a B.S. in Business from Boston University.

    There are many great things about starting an aerobics program for your body.

    While you are building up a sweat and working on your heart rate, all of your muscles are also getting great things out of the aerobics work that you are doing. As you bring new blood and oxygen to all of your body systems, you are going to find that you are giving yourself the best chance to really get rid of all that unwanted fat as you go along.

    When you body is in constant motion, all of the body systems are working hard to maintain body functions at a normal rate. Because your heart has to work harder your lungs need to work harder to provide your heart with the oxygen that it needs to keep pumping. All of these things are going to work in tandem with each other to make a situation in which you are really getting the most out of your entire work out.

    When we talk about health what and how do we define it? Does it mean free of illness or disease or not having high blood pressure or suffering from job stress. It todays age where everything is an instant fix and we worship the perfect body how do most of us hope to measure up in the long run. The stress itself in trying to look the part could probably be more harmful to our health. I will stand up and say I’m not a fan of the quick fix health solutions and most of them don’t last any more than a few months just from the pressure of trying so hard to maintain them. As you know we spend years developing the lifestyle we have now adjusted to and whether we like it or not it’s become a habit. Good health or bad is a habit and if we have gone down the road and are wondering how we ended up our current situation then it’s probably from habits we have become accustomed to over time. I know there is many really good people out there that can offer great advice on how to create a healthy lifestyle and make good choices and thats great. It is just such a radical shift we find ourselves lost because it’s out of our norm and totally opposite of all the habits we’ve developed. Most habits good or bad we have just fallen into over time and to change them does not happen overnight. If we want to lose weight and that is probably the biggest sought after most elusive goal in our modern society we try many programs and nutritional foods and they may work for a while but we still fall back onto our old habits and until we begin to change them whether it be quickly or slowly we still need to change them. I will say here and now that the most important thing you have to change in taking stock of your self is your Mind. Good health habits start with the mind and then work through the body and most importantly they take time. I will also say from personal experience that you must be patient with yourself and allow ourselves time to grow, not physically but mentally. Most of us wait until we have a crisis in our life then we rush out to the nearest health food store and buy up all the nutritional supplements and start jamming them into our bodies and then wonder why we feel so bad when it’s supposed to be good for you. I’ve have heard many people say that they tried this new diet and felt terrible so they dropped it, well I would like to say that it was too much of a sudden change and their bodies just reacted in a negative way. If anyone has watch that show “THE BIGGEST LOSER” you can see how they work very hard to have them develop new habits and teach them about nutritional foods. However when the host Alison Sweeney annouces that they will be going home for a week with their families many of them were worried because they may fall back into old habits. Well as it turned out only one member did and it was Paul Marks as the camera recorded him downing plenty of cokes and more than a few chicken wings. This would be his undoing as he was sent home from the Biggest Loser program. My point in all of this is something that I will be developing through this site is helping people learn the mental aspects of changing their lifestyle and that in turn leads to the physical side as we learn new habits and processes.
